Blackberry Almond Tart

Eating low-carb doesn't mean depriving yourself of fruit entirely. 
Here is a summer tart featuring the keto-friendly blackberry that comes in at 6g net carbs per slice (including the almond flour crust). This dessert is delicious enough to share with everyone you love.

Peanut butter cookies!

Good old-fashioned soft and chewy peanut butter cookies. Only 3 ingredients, and 3.33g net carbs each!

Peanut Butter Cookies - 3.33g net carbs each
  • 1 cup peanut butter
  • 1 egg
  • 1/2 baking (granulated) Splenda.
We used Jif Creamy Peanut Butter, which has 5g net carbs per 2TB -- if you are lucky, maybe you have access to a brand with even fewer carbs.


Served with 1/2 tsp. Smucker's Sugar Free Preserves - 4.16g net carbs each
Drop by tablespoonfuls onto baking silicone or parchment.

Dip a fork in granulated splenda, and press crosswise into the top of each cookie mound.

Bake for 10 mins at 350 degrees.

Makes 15 cookies
NET CARBS: 3.33g per cookie

Tapatio Joes

I wanted some sloppy joes, but the traditional sauce is way too high in carbs. Fortunately Tapatio sauce is delicious and virtually carb/calorie free. Also we're not pussies, so we can stand the heat. These were amazing.




RECIPE
  • 1 lb. ground beef
  • 4 portobello mushrooms, cleaned and gutted
  • 1 cup diced green bell pepper
  • 1 cup diced yellow onion
  • 4 slices pepper jack cheese
  • 2 tsp cumin 
  • 1 tsp coriander 
  • 1 TB chili powder 
  • 1 tsp cayenne pepper
  • Tapatio sauce to taste (20-50 shakes)

Pre-heat oven to 350 degrees.

Brown ground beef in large frying pan, add spices and Tapatio sauce.

In a separate pan, add the green bell peppers and yellow onions. Drain the ground beef mixture INTO the peppers and onions. Saute until onions are translucent.

Add onion mixture to ground beef and mix well. Cook for 5-10 mins on medium heat. 
Add more Tapatio sauce as desired.

Meanwhile, place your portobello mushrooms (head down) in a baking dish. 
Scoop the ground beef mixture into each mushroom, and cover pan with foil.

Bake for 20 mins at 350.

Remove from oven, remove and discard the foil.
Add pepper jack cheese slice to the top of each mushroom - put back in oven until cheese is melted.

Serves 4, though this is very delicious and could easily serve two. Actually, it DID serve two. The two of us. But I figure some people might find the thought of eating a half pound of ground beef to be a bit daunting. I might call those people underachievers.

You can reduce the carbs by limiting the amount of onions and bell peppers. You can reduce the calories by limiting the amount of beef.
